Honey Bar-B-Q Chicken
Ingredients

8 lbs of assorted Chicken Pieces

1 tbsp Pickling Spice

4 cups of Apple Juice

6 tbsp TBQ Steak and Chop

1 tsp Chilli Powder

1 tsp Lemon Pepper

1 tsp Dried Sage

1 tsp Dried Basil

1 tsp Rosemary

1 bottle of TBQ Honey Sauce

¼ cup Dark Brown Sugar
-
½ cup of Honey
-
½ cup Ketchup
-
½ cup Apple Juice
CHICKEN
SAUCE
Directions
Combine all sauce ingredients in a large mixing bowl, set aside.
Put pickling spice into cheesecloth or tea infuser then add it, along with the apple juice, into a pot. Bring to a boil and then reduce to a simmer for 5 minutes. Remove spice bag and let the apple juice cool to room temperature.
Add the chicken pieces to the mixture and brine for 6 to 8 hours, or overnight.
Combine remaining spices and put the mixture into a large dish. Lightly brush the chicken pieces with oil and liberally rub the pieces with the spice mixture.
Place the pieces, skin side down, on a preheated medium-high bbq or medium broil oven. Close the cover and reduce heat to medium. Cook 15 minutes, turn, cook for another 15 to 20 minutes.
Generously baste chicken pieces with sauce, lower temperature and close the cover or convection bake 375F, cook for another 10 to 15 minutes. Serve with TBQ Honey Sauce.
